Stuffed Peppers

These are a repeat meal at my house! They're so easy, packed with vitamins and protein, inexpensive to make and super filling. The perfect fall meal to add to your weekly rotation.


Ingredients:

  • Bell Peppers (1-2 per person depending on how much you'll eat) this recipe is enough for three, so if you need more, I would double it. It makes for great leftovers too. I usually only eat one but my man eats two easily.

  • Jasmine Rice or Yellow Rice ( I usuallly do 3 cups)

  • 1lb Ground Turkey

  • Shredded Cheddar Cheese

  • Salsa & Sour Cream (optional, but I like it with mine!)

  • One 16oz can of fire roasted tomatos drained

  • Garlic Powder

  • Onion Powder or minced onions

  • salt and pepper


Put your rice on first so it can be cooking since it takes the longest.

Preheat oven to 375

In a skillet over medium heat add your ground turkey & season with garlic powder, onion powder and salt and pepper. Cook until brown.

Add drained can of roasted tomatos to the skillet of turkey and turn to low to let simmer.


On a cutting board, slice off the hats of your bell peppers and clean out seeds and membrane.

When rice is done, add a scoop into each pepper then top with ground turkey and tomato mixture. Sprinkle a good amount of cheese on top and push everyting into the pepper tightly.


Bake for 15-20 minutes and serve with salsa and sour cream or hot sauce.


You can also add black beans, parsley or whatever else you like!
